THE METHOD

Mas Oliver us the result of a collective effort by a family for over 75 years. Even today, the artisan elaboration and ageing in cellars is conscientously respected.

Constant and meticulous care is required bottle by bottle in some tasks. For example, the wine clarification in the classic pupitre or the procedure of disgorgement to eliminate the residue from the yeast. As a result of this process, we archive a high quality Cava.

Our cava is the result of a blend of wines carefully selected from the traditional grape varieties grown in Penedès region: Macabeu, Xarel·lo and Parellada.
